Grown on the Shaw Ranch property out in the San Domingo Canyon. Barton Stevenot planted these Dijon clones in the early 1970's, and Chuck has worked these grapes for 25 years. There's a cool growing season with a long hang time. Great sun exposure though there's a partially shaded canopy protecting the grapes. Deep, red soil that stresses the grapes just the right amount.
WHen producing our Chardonnay, we do not use malolactic fermentation, hence there is less of a buttery flavor. When you walk the vinyard before harvest, you can practically taste the wine.

The Hovey Chardonnay is always very good. I think this year's is the finest vintage yet. Everyone who has tried it with me thinks it is one of the best they have ever tasted.
