Tasting Notes
The first aromas remind us of a spring garden with ripe peaches, nectarine and orange blossoms. The color and clarify of this wine is like looking at a fine diamond - it just sparkles. That first sip is full of citrus - like pink grapefruit or Meyer lemon. Then comes a hint of white pepper and a drop of honey. You'll notice a lovely crisp finish due to the acidity of this vintage. This is an all-season white wine that is ready to drink now.
Vineyard Notes
Deirdre Dalton carries on the tradition of her father and is producing amazing fruit. The fruit for this vintage was small making this a very exclusive wine.
Production Notes
This varietal is cold fermented at 55F. The wine is aged for up to a year before being bottled right here in Calaveras County about 1/2 mile from our Tasting Room.
Winemaker Notes
Our Viognier is barrel aged in a mix of new and neutral oak to highlight the floral and tropical nature of the fruit while also adding body and texture to the wine.
Food Pairing Notes
Pairs nicely with roast chicken, grilled salmon or pasta alfredo.
