This Rosato is an experiment in the art & science of winemaking (Chuck would be proud). This vintage is a blend of our traditional Sangiovese 50%, that we've topped up with a bit of Cinsault 30%, and a spalsh of Grenache at 20%.

Tasting Notes
Before you open your nicely chilled Hovey Rosato, admire the color - something like a sunset. Once opened, you might notice an aroma of citrus as you pour your first glass. That first flavorsome sip reminds you of mandarin oranges, or maybe ruby red grapefruit, but drier. Its complexity of this classic Rosato is intriguing and you take another sip, several in fact. Something reminds you of watermelon rinds and cherries just before they are ripe. The bright beautiful color adds to the enjoyment of the clean acidity and lingering finish.
Vineyard Notes
This vintage of our Italian style Rosato is a study in the art and science of winemaking. We've stepped back to Calaveras County for this vintage getting fruit from both well-known (and loved) vineyards. Staying true to our Rosé roots, we started with 50% Sangiovese from Chatom, and blended a bit of Cinsaut (30%) and a splash of Grenache (20%) both from Dalton. The result speaks for itself.
Winemaker Notes
We had fun with this one. We don't often blend our varietals, but something told us this was the right time to do it. The fruit was pressed and The free run was left on the skins for only a few hours, resulting in the beautiful sunrise color. The wine is left to age in neutral oak barrels for ~12months before being bottled.
Food Pairing Notes
The acidity of this wine makes sure it can stand up to food. It marries well with fruit plates or cheese platters, Fettuccini, and Thai Curries. We love to serve it with a holiday Turkey dinner.
