Hovey Isabel Sparkling wine is made from 100% Chardonnay grapes that are fermented in the bottle, referred to as Methode Champenoise. This classic style, often called Blanc de Blancs, makes a sparkling wine with lots of fine textured bubbles.

Tasting Notes
We think there is always something to celebrate. Our sparkling wine is very approachable and feels equally at home with casual and more formal affairs. Once you "pop the bubbly" you're met with hints of citrus, pear and floral aromas with a just hint of yeast. The light almost foamy bubbles do indeed tickle your nose as you take your first sip. It's nice and dry with a fresh fruitiness of green apples and tropical fruit. There is a soft texture that comes with the fine bubbles. Pour yourself a second glass and raise a toast to whatever feels right at the moment.
Vineyard Notes
This fruit comes to us from the North Coast with it's cooler nights and wetter climate, this is one of the few varietals we source from outside of Calaveras County.
Production Notes
Hovey Sparkling Wine is fermented using the Méthode Champenoise which refers to a second fermentation in the bottle which gives the wine it unique bubbly nature.
Food Pairing Notes
Anything creamy goes well with our Sparkling wine - think Shortbread cookies, triple-cream brie cheese, scallops or custard tarts. Or if you prefer, a cheese pizza on a Tuesday night works too.

This lovely sparkling is perfect on a hot summer day, brunch anytime and to cheer in the New year. Love all the Hovey wines!
